Culinary inspiration from North Texas to the Hill Country

Chef Dave Trosko is a true inventive genius in the North Texas culinary scene — a chef whose creative spirit turns every plate into an unforgettable experience. With over 20 years in fine dining, he began as a passionate server and certified sommelier before diving headfirst into the kitchen.

Driven by a desire for freedom and family focus, Trosko left corporate kitchens to launch his own ventures. In Denton, he created the acclaimed Swine & Garden Food Truck at Armadillo Ale Works, a bold ā€œtest kitchenā€ that blended pork-forward and vegetarian dishes using local ingredients. Signature creations included massive 45oz sous vide tomahawk ribeyes, Oaxacan cricket tacos (championing sustainable proteins), the playful ā€œCrüebanā€ Cubano-Reuben fusion, loaded corndogs, and the legendary ultra-spicy Goatman Sandwich. His irreverent style shines through reimagined classics, molecular gastronomy techniques, fermentation experiments, exotic peppers, and unexpected flavor combinations that delight and surprise.

Today, through Trosko Culinary, Chef Dave delivers personalized private chef experiences, coursed fine-dining menus in clients’ homes, custom catering, and exclusive events. He co-created the popular Speakeasy Supper Society and The After Hours Chef’s Table. Seasonal touring multi-course dinner series’ with partnering breweries and distilleries. Whether crafting farm-to-table suppers, wine-paired dinners, or experimental tasting menus, Trosko brings theater, science, and pure joy to the table.

Chef Dave balances his culinary passion with voice acting (including iconic roles like Present Mic in My Hero Academia and Gauche in Black Clover), homebrewing, gardening, and being a dedicated dad. His philosophy is simple: make food that is fun, delicious, and conversation-starting: always pushing boundaries while celebrating quality ingredients and Texas hospitality.
